Here is a basic assignment that along with instruction will take kids 2 weeks. Blender is the software. Model and animate an object moving. They follow along with the ice cream cone and then animate something of their own. I've made a series of videos going over the assignment that students can follow - each video is 30s-2 minutes - attempting to chunk the larger task into basic skills.
I'd go over first 3 videos together without introducing assignment. Stop there and have kids play with software for rest of that day, creating whatever they want to.  Next class give them the task.
